Well one of my favourite things to eat is cookie dough, who doesnt love cookie dough, I often am baking cooking dough cupcakes or cookie dough trufffles which ofcourse arent clean. So finding this recipe really made my day, it uses alot of peanuts/peanut butter so not good for those with nut allergies but it has the most awesome flavour and you really just want to eat the base on its own, infact i did just make a base adding cocoa powder to it and rolling it into balls….my kids ate these before the day ended (i *may* have helped them a little there too!)
Choc Chip Cookie Dough Cheesecake Slice
Makes 18 Bites
… Crust Ingredients:
•3/4 Cup Pitted Dates
•1/4 Cup Unsweetened Shredded Coconut
•1 Cup Dry Roasted Peanuts
•1 Tsp Vanilla Extract
•3 Tbsp Natural Peanut Butter
•1/4 Cup Ground Flax Seed
•1/4 Cup Water
•1/4 Cup Dark Chocolate Chips or Carob Chips (these will be folded in last)
•1/2 Cup Natural Cashew or peanut Butter (or 1/2 Cup Reduced Fat or Light Cream Cheese (Room Temperature)) (I did half and half 1/4 cup peanut butter and 1/4 cup low fat cream cheese)
•1 Tsp Vanilla
•1/2 Cup Non-Fat Plain Greek Yogurt or natural yoghurt (i used natural yoghurt)
•1 Tbsp Honey
•4 Packets of Stevia or extra couple of tablespoons of honey
•Chocolate Chips for topping (Roughly 1/4 Cup)
1.Using your small food processor bowl and blade blend all cheesecake topping ingredients except chocolate chips until smooth and set aside.
2.Using your large food processor bowl and blade process all crust ingredients except chocolate chips until dough like consistency with visible chunks of nut.
3.Manually fold chocolate chips into crust.
4.Grease an 8×8 baking pan or glass dish with a healthy oil.
5.Press crust mixture evenly into baking dish.
6.Top with cheesecake filling using a spoon or spatula to make sure the filling is evenly distributed over the crust.
7.Sprinkle 1/4 cup of chocolate chips over the top of the squares.
8.Cover with wrap and freeze overnight.
9.When you’re ready to serve remove from the freezer, cut into squares and serve immediately
