I made these as a special treat to take to my parents place today. They are having major renovations done to their back yard so lots of tradesmen there during the week and Mum has been good and has been baking for them (she is so thrilled that after many years she gets her dream backyard, her excitment means yummy food for the tradesmen lol) so I thought I’d help her out and made a batch of these for mum and dad to have today and the rest she can give to the tradesmen for their morning tea 🙂 They are addictive and very rich too definately a sometimes treat! These are not clean eating as it uses gluten free icing sugar but is suitable for those on a low FODMAP diet and are gluten free, these can be lactose free if dairy free chocolate is used or I do believe after googling that dark chocolate doesnt contain lactose or only a teeny little bit, but i think its the higher content like 70% but so far from what I have googled that dark chocolate is virtually lactose free.
Chocolate Peanut Butter Truffles
1/2 cup dark chocolate, melted
1/2 gluten free icing sugar
1/4 cup peanut butter
1/4 tsp vanilla
1/3 cup crushed peanuts for coating
Melt chocolate in the microwave using a clean, dry bowl in 30 seconds burts until melted. Pour into a mixing bowl with peanut butter, icing sugar, vanilla and mix well. If a little runny and not suitable for rolling add a little more icing sugar. (Dont put in freezer to harder mixture a little as this will make the mixture go crumbly). Roll mixture into balls and roll in crushed peanuts. You can put it in the fridge a few minutes to take that softness away if you cant wait to try one! Store in air tight container.
