A really yummy brownie recipe I made for the kids school lunch box. I love surprising them with extra special goodies from time to time. Dark chocolate has no lactose (70% and up) so is safe for those on a lactose free diet. For those on the low FODMAP dark chocolate is also suitable but for some people it may be too much so please asses your own dietary requirements. I am still trying to work out if dark chocolate is a problem for me, i suspect it might be so will recreate these with no dak chocolate and only use cocoa.
Gluten Free Brownies
6 Tbsp dairy free spread
200 grams dark chocolate (70%) chopped
1/4 cup dark brown sugar
2 large eggs, at room temperature
1 Tbsp cocoa
3 Tbsp corn flour (gluten free)
1 cup toasted nuts, roughly chopped (optional) I didnt add these as they were special snacks for the kids to take to school and there is a no nut policy otherwise I definately would add them
Preheat oven to 180 degrees C. Line an 8×8 inch dish with baking paper. (I like to spray the dish first so they baking paper sticks to it. Melt the butter and chocolate in a bowl over a saucepan of boiling water, making sure the bowl doesnt touch the water. Let cool for 5 minutes. Stir in the sugar and eggs one at a time. In a seperate bowl sift cocoa and corn flour and stir into the chocolate mixture, stir constantly with a spoon for 1-2 minutes. Then add the chopped nuts (if using). Pour into the dish and place in the oven for 20 minutes. Dont over cook!
