These are great for those who have a little bit of a sweet tooth but dont want to go overboard and just need that tiny little hit of sweetness without going for the refined sugars! I am a huge fan of gingerbread so these were an awesome discovery!!! Perfect for lots of diets: Clean eating, gluten free, lactose free and low Fodmap oh and vegan too!
Healthy Gingerbread No Bake Balls
Makes approx 24 to 30 little balls (if you use nuts/choc chips you can get a few more balls from the recipe)
1/4 cup flaxseed
1/3 cup almond meal
1 tsp ginger
1 tsp cinnamon
2-3 tbsp maple syrup (or honey if not on low fodmap diet) start with 2 and if you need a wetter mix add a little more syrup or a tiny bit of water if 2tsp is sweet enough for you)
Optional 1/2 cup crushed nuts or dark choc chips
Combine all dry ingredients in a bowl then add maple syrup (or honey if preferred). Store in a container in the fridge, or freeze for later.
