I wanted to make a special post about these ones so this is easy to find if searching the blog. Basically using the similar recipe that I just posted earlier today https://mycleanplate.wordpress.com/2012/07/28/sugar-free-choconut-balls-clean-eating-sugar-free-low-fodmap-gluten-free-dairy-free-vegan/ you can make super healthy no sugar (of very minimal amount of sugar if you think party guests would prefer, but still its only the smallest amout of rice malt syrup which is 100% from rice, it gets it sweetness by breaking down the starch in the rice). I whipped up a small batch as a trial run as I’m sure there are lots of parents out there looking for healthy, low or no sugar party food options that kids will love. These now will stay in an airtight container as the kids special treats….or bribes if you prefer to call it that lol to get them to do their homework or chores etc.

Sugar & Copha Free Chocolate Crackles
4 cups puffed rice (gluten free)
1 cup coconut oil
1 cup shredded coconut
1/4 cup cadbury cocoa unsweetened (or 1/2 cup sugar free drinking chocolate, naturally sweetened like this one http://www.vitarium.com.au/products/SUGAR-FREE-DRINKING-CHOCOLATE.html from coles – this way you wont need to add rice malt syryp later if needed
1 Tbsp vanilla
1 Tbsp cinnamon
Optional 1 Tbsp rice malt syrup (this ofcourse will give it a very small sugar content but only very minute)
Place all ingredients in a bowl except puffed rice, mix together making sure there are no lumps of coconut oil then add in puffed rice. Spoon in mini patty pans and place in the fridge for an hour, or in the freezer for 2-30 minutes. Store in an airtight container in the fridge or to last longer put them in the freezer, then you have plenty of special healthy treats for the kids anytime. Much better than giving them a freddo frog!
