Alot of clean eating sweets I have found have alot of nuts or use peanut butter, which is yummy but not good for the kids to take to school (due to no nut policy). So I wanted something clean and yummy that the kids could take to school so tonight I did 2 variations of no bake cookie balls. These taste amazing, nice and sweet combination of dates and honey! These are now packed in their lunch boxes for school because if I dont put them in there and out of sight I’d be having a midnight snack!! mmmmmmm
No Bake Cookie Balls
1 cup pitted dates
2 cups quick oats (or 1 cup quick oats and 1 cup quinoa flakes)
4 Tablespoons honey
1/2 cup unsweetened coconut
2 tsp vanilla essence
2 tsp cinnamon
dark choc chips (optional) these are added after being in food processor.
Put all ingredients in a food processor except the choc chips (if using). Process until mixture is wet and holds together, for me mixing it long enough it formed a dough ball. If its not sticky enough to hold together just add 1 tablespoon of water to help it or you could add an extra tablespoon of honey if you really wanted it a extra sweet. Scoop tablespoon full and roll into balls. (hard to say how many exactly i made as the kids and i kept taste testing, maybe makes about 30 balls? Eat as is or store in the fridge for a chilled ball. You can keep these in the freezer too. You could also roll these into extra coconut too!
approx 40 calories per ball and just under 1 gram of fat.

1/2 cup unsweetened coconut
1 tsp cinnamon
1tsp vanilla
1/3 cup dark choc chips
see directions above.
These are approx 40 calories and just under a gram of fat per ball.
